Working Method

Madeleine
Melt the butter and mix with the others ingredient for 4 min at low speed using a paddle. Add the Smoobees and mix 1 min. more at low speed. Pipe 50 gr of batter in a lemon shape silicon mold.

Carat Coating
Melt the Carat White to 40°C and add the color to have a nice lemon color. Dip the bottom of the Madeleine in it.
