Working Method

Plant-Based Cake Base
  • Mix all the ingredients for 1-2 minutes until homogeneous.
  • Spread the cake batter on lined parchment paper 0.5cm thick.
  • Bake at 180°C for 12-15 minutes depends on size.  

Sweet Potato Filling
  • Melt the gelatine mass, add into sweet potato, and incorporate well.
  • Flatten it with parchment paper; freeze it.
  • Cut it using a round cutter when it is frozen.

Purple Potato Pudding
  • Milk, purple potato powder, corn starch, and sugar in a pot, mix well and cook it until thickened; add gelatine mass and mix well.
  • Fill it into a spiral shape silicone mould and freeze it.

Coconut Mousse
  • Heat up coconut milk, milk, and sugar until the sugar has dissolved.
  • Add gelatine mass and mix well; allow to cool down to 30°C.
  • Whip the whipping cream until soft peak, fold into the mixture. 

Finishing
  • Spread a thin layer of Cremfil Talas on the plant-based cake base.
  • Prepare small cake ring, place a layer of cake base at the bottom, pour a layer of coconut mousse, assemble the frozen sweet potato filling at the center, then pour another layer of coconut mousse.
  • Lastly, assemble the frozen purple potato pudding on top of the coconut mousse; freeze it.
  • Cut it in half, decorate with Ambiante.
